Grilled Chicken and Polenta with Nectarine~Blackberry Salsa

Ingredients:
1 tbsp plus 1 tsp extra virgin olive oil
1 tbsp ground cumin
1 tsp kosher salt
3/4 tsp ground pepper
1 16-18oz tube plain Polenta
1 pound boneless, skinless chicken breast
2 nectarines, halved and pitted
1 pint blackberries, chopped
2 tbsp chopped cilantro
1 tbsp lime juice
Hot sauce to taste

Preparation:
1. Preheat grill to medium-high

2. Combine 1 tbsp oil, cumin, salt and pepper in a small bowl. Rub 1 tsp of the mixture on Polenta, rub the rest on both sides of chicken. Cut the Polenta crosswise into 8 slices. Rub the cut nectarine halves with the remaining oil

3. Place aluminum foil over the grill rack, place the chicken, Polenta slices and nectarines on the grill. Grill Polenta until hot and slightly charred, grill nectarines until tender, grill chicken until fully cooked. Coarsely chop nectarines, let chicken cool 5 min, then thinly slice.

4. While the chicken is cooling, combine the chopped nectarines, blackberries. cilantro, lime juice, hot sauce and the remaining salt in medium bowl. Layer the Polenta, chicken and fruit salsa on 4 plates and serve.
