Orange Oatmeal Bread
2 1/4 Cups Oat Flour or Ground Oatmeal
4 teaspoons Baking Powder
1/4 teaspoon Baking Soda
3/4 cup sugar (Stevia, or Agave can also be used)
3/4 teaspoon Salt
2 Tablespoons of Coconut, Canola or Vegetable oil
2/3 Cup Orange Juice
1 Tablespoon grated Orange Rind
Preheat oven to 350 degrees. Sift together all dry ingredients. Add oil, orange juice and orange rind; stir until dry ingredients are moistened. Pour into a lightly oiled 9″x5″ loaf pan. Bake about 1 hour.
