Cheesy Cauliflower Casserole
Try this savory and veggie packedthat is a quick fix.
|2||heads of cauliflower|
|4||pieces of bacon (chopped)|
|1||small yellow onion (chopped)|
|1⁄4||Cup||half and half|
|4||Ounce||goat cheese (crumbled)|
|Pinch||sea salt & pepper to taste|
to 350º. Break cauliflower into florets and place in a large pot. Cover with water and bring to a boil; cook cauliflower until it is soft when pierced with a fork, 10-15 minutes. and set aside.
While cauliflower cooks, fry bacon until crispy and drain on a paper towel. Melt butter (in the same pot you cooked the cauliflower in) over medium-low heat,onions and sauté until soft. Turn heat to low. Return cauliflower and mash well with a potato masher. half and half, goat cheese, bacon, and sea salt and pepper to taste. Mix well. Pour cauliflower mixture into a baking greased with coconut oil or butter. Bake uncovered for 30 minutes. Let stand for a few minutes before serving.
