Ingredients
2 | heads of cauliflower | |
4 | pieces of bacon (chopped) | |
4 | Tablespoon | butter |
1 | small yellow onion (chopped) | |
1⁄4 | Cup | half and half |
4 | Ounce | goat cheese (crumbled) |
Pinch | sea salt & pepper to taste |
Instructions
Heat oven to 350º. Break cauliflower into florets and place in a large pot. Cover with water and bring to a boil; cook cauliflower until it is soft when pierced with a fork, 10-15 minutes. Drain and set aside.
While cauliflower cooks, fry bacon until crispy and drain on a paper towel. Melt butter (in the same pot you cooked the cauliflower in) over medium-low heat, add onions and sauté until soft. Turn heat to low. Return cauliflower and mash well with a potato masher. Add half and half, goat cheese, bacon, and sea salt and pepper to taste. Mix well. Pour cauliflower mixture into a baking dish greased with coconut oil or butter. Bake uncovered for 30 minutes. Let stand for a few minutes before serving.
